
Swiss Chard & Collard Greens in Coconut Cream

Awesome simple accompaniment for a steak dinner, lunch or any vegetarian dish
Ingredients
- 2 tablespoon Coconut Oil (unrefined) or ghee or butter
- 1 medium Onion chopped finely
- 2 cloves Garlic pressed or finely chopped
- Salt and pepper to taste
- 500gms Swiss Chard
- 500gms Collard Greens
- 1/3 cup Kentatse Coconut milk
Instructions
- In a large skillet, over medium then sauté onions and garlic until soft in your healthy fat.
- Add Collard greens and toss for 5min, feel free to add a little more oil if needed Note: It's important to add the collard greens before the swiss chard as they take longer to cook
- Add the swiss chrard and toss for a further 5 min
- Season with salt and pepper
- Reduce heat to med/low and add the coconut milk, stir well
- Allow to heat/simmer slightly to reduce for about 1-2 minutes
- Enjoy!
