Swiss Chard & Collard Greens in Coconut Cream

Awesome simple accompaniment for a steak dinner, lunch or any vegetarian dish

Ingredients

  • 2 tablespoon Coconut Oil (unrefined) or ghee or butter
  • 1 medium Onion chopped finely
  • 2 cloves Garlic pressed or finely chopped
  • Salt and pepper to taste
  • 500gms Swiss Chard
  • 500gms Collard Greens
  • 1/3 cup Kentatse Coconut milk

Instructions

  1. In a large skillet, over medium then sauté onions and garlic until soft in your healthy fat.
  2. Add Collard greens and toss for 5min, feel free to add a little more oil if needed Note: It's important to add the collard greens before the swiss chard as they take longer to cook
  3. Add the swiss chrard and toss for a further 5 min
  4. Season with salt and pepper
  5. Reduce heat to med/low and add the coconut milk, stir well
  6. Allow to heat/simmer slightly to reduce for about 1-2 minutes
  7. Enjoy!
